Blueberry Cobbler with Oatmeal Cranberry Nut Crumbles

  • 2/3 cup sugar
  • 2 tablespoon cornstarch
  • 3/4 cup water
  • 3 cup fresh blueberries
  • 1 tablespoon butter or margarine
  • 1 teaspoon ground cinnamon
  • 6 or more Carolina Cookie Oatmeal Cranberry Nut Cookies

Use a 1 1/2 quart baking dish. Mix sugar and cornstarch in a sauce pan. Stir in water and boil for 1 minute, stirring constantly. Add berries; pour into baking dish. Sprinkle with cinnamon and dot with butter. Crumble at least 6 Carolina Cookie Oatmeal Cranberry cookies on the top of the fruit mixture. Be sure that the top is covered with cookie. Bake at 425 degrees F. for 20 - 25 minutes or until cobbler is bubbling. Serves 6.
