Gingerbread Pumpkin Mousse

  • 2 cup Prepared pumpkin (such as Libby's)
  • 8 ounce Whipped cream cheese
  • 1 teaspoon Pumpkin pie spice
  • 4 tablespoon Brown sugar
  • 1 cup Whipped Topping
  • 1 dozen Carolina Cookie Company Gingerbread Cookies

Mix pumpkin and cream cheese. Add pumpkin pie spice and brown sugar. Combine. Fold in whipped topping until smooth and mixes. Spread on cookie, add top cookie. Place on baking sheet in refrigerator to chill until ready to serve.
