- 8 ounce cream cheese, softened
- 1/2 cup key lime juice
- 1/2 can sweetened condensed milk
- 1 teaspoon freshly grated lime zest
- 2 cup Cool Whip, thawed
- 6 Carolina Cookie Sugar Cookies, crumbled
Use 1 1/2 – 2 ounce shot glasses. Recipe fills 18-22 shot glasses. Using an electric mixer, blend cream cheese, lime juice and sweetened condensed milk until smooth. Stir in lime zest. Fold in whipped topping blending until smooth. Crumble Carolina Cookie Sugar cookies. Layer the cookie crumbles and key lime mousse beginning with the cookie crumbles and ending with sprinkling cookie crumbles on the top of the mousse. Use a decorating bag to get the mousse in the shot glass. If you don’t have one, you can make you own by cutting a small corner off a plastic baggie. Store in freezer until ready to serve. Set out about 30 minutes before ready to serve.
